Today happens to be National Doughnut Day


Chocolate Ice Cream Day

Naturally, the two would have to be combined,

but to be honest with you, I’m not feeling kitchen creativity.  Mostly because it is SO VERY HOT, and my kids have been home.  I enjoy having them home for the summer, but hearing “mom”every 10 minutes isn’t the most helpful for creative concentration.

when you mix





with self rising flour, you get batter.

When you pour said batter into mini doughnut pans,

bake for a few minutes,

and dip into glaze,

you get doughnuts.


Chocolate Peanut Butter Cup Ice Cream Doughnuts


  • 2 cups of ice cream
  • 1 cup of self rising flour
  • 1 cup of powdered sugar
  • 3 tbsp milk


  • let ice cream soften at room temperature for about 15 minutes
  • blend with the flour
  • pour into doughnut pans
  • bake @350 for 6 minutes
  • allow doughnuts to cool in pans about 3 minutes
  • while the doughnuts are baking/cooling make the glaze
  • combine the powdered sugar and the milk
  • whisk until the glaze is smooth {you may need to add a bit more milk}
  • dip the doughnuts in glaze
