i love thanksgiving. i try not to get too into christmas until thanksgiving has passed; i do believe it deserves a day all on its own.  but november 23rd it was game on. there was a bit of black friday shopping. we put up our outdoor lights, decorated our mantle, and a batch of this chocolate gingerbread snack cake had our house selling like christmas.

stella has a december birthday. this year it’s the big sweet 16! i have no idea how that  happened. we’ll wait until after her party to put our tree up, but the rest of the house is feeling very festive.

stella loves to decorate. her room, her bathroom, even cakes and cookies. she’s my crafty and creative one for sure. she made a giant gingerbread turkey for our thanksgiving table, and it smelled so good. she doesn’t normally eat her creations, but this one she had to take a bite out of.

turns out she loves gingerbread. i make gingerbread every year, and she has never tried a single bite, but the smell of her turkey convinced her. now she’s hooked. she asked me to bake gingerbread last weekend, as long as i could make it less spicy. gingerbread is one of my all time favorite holiday treats. it’s fast and easy to make, and nothing makes your home smell more festive than gingerbread baking.

to accommodate her less spicy request, i decided to go with a chocolate gingerbread snack cake. i love the chocolate cinnamon combination. you still get the classic gingerbread flavor from the ginger, molasses, nutmeg, and cloves, but the cocoa tames the spice factor. this snack cake is sure to become a holiday classic in our house.

Ingredients:

  • 8 Tbsp (1 stick) butter, softened at room temperature
  • 2 1/2 cups flour
  • 1/3 cup cocoa powder
  • 2 tsp baking soda
  • 1/2 - 1 Tbsp ground ginger (can use freshly grated)
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2/3 cup packed brown sugar
  • 1 cup unsulfured molasses
  • 2 eggs, at room temperature, lightly beaten
  • powdered sugar for topping

Directions:

  • heat oven to 350 degrees
  • butter and flour a 9 x 13 baking pan
  • bring 1 cup of water to a boil, remove from the heat, and add baking soda (set aside)
  • in a large bowl whisk together the flour, cocoa, and spices
  • in the bowl of a stand mixer, fitted with paddle, cream butter until light
  • add brown sugar and beat until fluffy
  • add molasses, baking-soda/water mixture, and flour, then beat in the eggs
  • pour batter into the prepared pan and bake at 350 for 30 minutes (a pick inserted in the center should come out clean)
  • cool in pan on a wire rack, cut, and dust with powdered sugar before serving

my original gingerbread recipe calls for 1 tablespoon of freshly grated ginger. to make it more mellow for stella i substituted ground ginger, and reduced the amount. but if you can handle the spice, i suggest you use  fresh. it is absolutely delicious.

i almost always use dark cocoa (this  Double-Dutch Dark Cocoa  from King Arthur Flour is my favorite)  but again feel free to substitute the cocoa powder you normally use.
