I’ve never really been one to diet.

As soon as you tell me I can’t eat something,

that, of course, is ALL I want.

I LOVE to eat,

{okay that is a HUGE understatement, I dream about food}

so I have to balance that love with keeping active.

I enjoy running

{well mostly how I feel after the run}

and the kids keep life pretty busy,

but I really don’t want to eat all of the calories that I  work

REALLY hard to burn off.

That’s where “sneaky” snacks fit in.

Snacks that look good,

{and these are SO pretty}

taste good,

{dark chocolate HELLO}

but are also good for you.

 

Fruit is a go-to snack for us,

but I know it’s not all that FUN,

so I wanted to jazz it up a bit.

Plus, with warm weather already here,

eating something frozen on a stick is a MUST.

 

These popsicles are FUN

and EASY

Chocolate Dipped Berry Pops

Ingredients

  • For the popsicles
  • 2 cups of berries {chopped}
  • I used strawberries and raspberries
  • water
  • For the magic Shell
  • 1 cup of dark chocolate chunks
  • 1/4 cup of coconut oil

Instructions

  • place the berries in a blender
  • blend until smooth adding water as needed (I only used about 2 tbsp}
  • freeze in popsicle molds
  • {Dixie cups work just as well}
  • To make the Magic Shell
  • melt the chocolate and coconut oil together
  • {about 40 seconds in the microwave}
  • allow to cool just a bit
  • when you are ready to eat...dip the popcsicle in the chocolate
  • watch the magic happen...it hardens almost immediately!

and the homemade magic shell is

SO much less messy than simply melting chocolate.
