Chocolate Cookie Crisps

We are back from vacation, the kids are back in school, and I am finally getting back on a schedule. Let me tell you it feels good. Vacation is always nice, but after a week off it’s nice to get in the kitchen again.
Somewhere between the west coast and the east coast {for the life of me I cannot remember where I saw them} I found my new favorite snack… Cookie Chips
Sweet like a cookie, but crispy and crunchy like a chip
I couldn’t wait to try and recreate them at home.
I started with a classic chocolate wafer recipe from King Arthur flour leaving out the baking powder {I wanted them to stay as thin and crisp as possible}
Chilling the dough is a must, and I used cocoa powder to “flour” my surface. I love a sweet and salty snack, so I added a bit of sea salt to the tops before baking. This is totally optional, but I do recommend it. They were mighty tasty.
Every oven bakes differently; the baking time is listed at 10 minutes, but as soon as you smell chocolate, they are done, so watch them carefully. Burnt chocolate does not taste good at all!
Ingredients
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup dark cocoa powder
Instructions
- cream together the sugar and butter
- add in the egg and vanilla, then the flour and cocoa
- cover and chill for at least 30 minutes
- preheat the oven to 350°F
- roll the dough about 1/8" thick; use cocoa instead of flour to dust your surface
- cut into rounds {I use a glass but a biscuit cutter works great too}
- bake on a lined baking sheet for about 10 minutes
- cool completely before removing
You want your cookies to be as thin as you can possibly get them, so that they are like potato chips, perfectly popable. Mine were not exactly as thin as the bagged snack from the trip, but they were delicious.
