thanksgiving has come and gone. my parents are safely back home, and now it is time for all things christmas. i couldn’t think of a better recipe to usher in the season than these chocolate chip gingerbread muffins.
i typically don’t decorate for christmas until after stella’s birthday on the 10th, and we don’t put up our tree until the week before christmas. i bake, and listen to holiday music, but the decorating usually waits. this year i am really itching to get decorations up. last year we moved on christmas eve, and the year before we traveled for the holiday, so we haven’t really done christmas in a big way for a long time.

stella has grand plans for a tree in every room. i have always wanted to hang a wreath on every window, and ian has big plans for pretty much every string of lights he can get his hands on. it’s about to get very festive at chez kinnaird.
but until i get around to putting away all of our fall decor and give the house a good cleaning, these chocolate chip gingerbread muffins are all the holiday spirit i need. not only are they supremely delicious, they make the house smell like santa’s workshop.

chocolate chip gingerbread muffins
Ingredients:
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- 1 stick (1/2 cup) butter, melted
- 1 egg
- 3/4 cup molasses
- 3/4 cup milk
- 1/2 cup packed brown sugar
- 1 cup of chocolate chips
Directions:
- preheat the oven to 375 degrees
- line muffins pan with paper liners
- in a large bowl whisk together the flour, baking powder, baking soda, and spices
- in another bowl whisk together the butter, egg, molasses, milk, and brown sugar - blend well
- add wet ingredients to the dry and stir just until combined, then fold in the chocolate chips
- scoop into liners (3/4 cup full) and bake 15-18 minutes - a pick inserted into the center should come out clean
i am a firm believer that muffins, like these apple or these zucchini ,can be healthy. these chocolate chip gingerbread muffins maybe not so much. they are a wee bit heavy on the butter and there’s a fair amount of sugar too, but it’s holiday time so go for it. they are so good i think you may even want to have two.
