Chocolate Cake Doughnut {PB Cup} Ice Cream Sandwich

Another doughnut recipe…I may be stuck in a rut.

Actually, I didn’t have anything planned for today.
I’m a bit under the weather.
Then, I heard today was national ice cream sandwich day.
This I could  not miss.

In place of the chocolate cookie, I decided to use a chocolate cake doughnut.
You know how I feel about those.

We had vanilla ice cream at home, so all I had to do was add a swirl of PB and a few mini PB cups and we were in business.

For the doughnuts:
1 3/8 cup of flour (I used a combo of AP and whole wheat)
1/2 cup of cocoa powder
1 tsp baking powder
1/2 tsp salt
2 eggs
3/4 cup of sugar
1/3 cup of buttermilk

combine all of the dry ingredients
add in the eggs
and finally the buttermilk

roll out on a lightly floured surface
cut into doughnuts
 ~ a doughnut cutter is one gadget I don’t have so I use glasses

bake @375 for about 8 minutes

once cool fill with ice cream
wrap and place sandwiches in the freezer until your’re ready to eat

You’ve got to love a day dedicated to the all-american ice cream sandwich.
