you may not think banana and gingerbread go together.  trust me, this chocolate banana gingerbread is sure to be a big hit this holiday season

we’re down to the final three days of school. they’re not even full days. the kids have semester finals so they’ll be home by noon. i’m excited about the down time, but when the kids are home they eat nonstop. quick bread, like this chocolate banana gingerbread, is my response to the constant “what can i eat?” questions.

i love quick breads like banana [4] and zucchini bread [5]. they are easy to make. quick breads usually don’t require any fancy ingredients. best of all, they are perfect for breakfast, lunch, snack, and when you add chocolate even make a great dessert.

around holiday time i cannot get enough gingerbread [6]. not only is it delicious, but it makes the house smell absolutely festive. but i get the spice is not for everyone. stella included. she likes her gingerbread toned down a bit.  banana, while it may seem like an odd combination for gingerbread, tames the spice and adds sweetness and moisture to the loaf.

because it’s holiday time, and we’ll all get back to healthy eating in january, i added dark chocolate chunks.

this chocolate banana gingerbread is the perfect holiday snack

  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground allspice
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 3 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup molasses
  • 2 tsp vanilla
  • 1 stick ( 8 Tbsp ) butter, very soft
  • 1/2 cup packed brown sugar
  • 4 ounces dark chocolate, chopped
  • powdered sugar for topping (optional)


  • preheat the oven to 350 degrees
  • grease a standard loaf pan [8]
  • in a large bowl whisk together the flour, baking soda, and spices
  • in another bowl whisk together the  eggs, molasses, and vanilla
  • in the bowl of a stand mixer fitted with a paddle attachment cream the butter and sugar on medium until light and fluffy
  • add the egg mixture and mix until combined
  • add the flour, mixing until all the flour is incorporated, and then add the bananas
  • finally fold in the chocolate chunks
  • spoon batter into the prepared loaf pan
  • bake 50-55 minutes until a pick inserted in the center comes out clean
  • cool in pan 15 minutes, then finish cooing on a rack
  • once cool dust with powdered sugar (if using)

this recipes starts with my all time favorite banana bread recipe from the vanilla bean baking book [9]. if you don’t have the book already, add it to your must have list. it is my most used baking book by far. her recipe for banana bread is simply perfection.

some of the sugar is replaced by molasses,  and the pecans are replaced by chocolate chunks. i skip the sour cream altogether and added the classic gingerbread spices –  cinnamon, ginger, nutmeg and allspice.
