it’s rare to find a group of friends that you can be completely yourself around

and I mean completely yourself, not just the Facebook version of yourself

the pretty shiny version with hair that always looks salon fresh, a house that is always spotless, kids that of course never act up or get messy, and meals that are magazine cover worthy

if you do have a group like this, you know how lucky you are

a few weeks ago I got to spend 3 days in the Carmel Valley  at Holman Ranch,  with my group

we laughed A LOT, ate A LOT, learned A LOT, and most of all just had a great time being together; I can’t speak for the others, but it was exactly what I needed

the ranch itself is beyond gorgeous with 10 guest rooms, a great room, game room and the views…simply breathtaking

we took turns making meals for the group, and let me tell you dessert bloggers  like Hayley and Dorothy come PREAPRED with goodies

Trish and Amy KILLED it with their blueberry muffins and hash brown crusted quiche

Amy and I had lunch detail, and thanks to the lovely folks at Tillamook, Jennie-O , and Planet Rice (and it IS the best rice on the planet), the taco bar was a SMASH

when party bloggers  Mindy and Glory are in charge of snack-time, you know it’s going to be delicious and color coordinated 🙂

for dinner Lisa and Cathy knocked our socks off with a panini bar – thank you Hamilton Beach for the presses!

our first night in Carmel, we had dinner at Will’s Fargo

everything was amazing, but for dessert I ordered  the chocolate banana bread pudding

I chose well!

and just in case I don’t get back to Will’s Fargo anytime soon, I made my own…big surprise there

Ingredients

  • for the banana bread -
  • 2 cups flour
  • 1/2 cup sugar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chunks
  • 3 ripe bananas, mashed
  • 1/4 cup plain Greek yogurt ( I use Tillamook Farmstyle Greek )
  • 2 eggs, beaten
  • 6 Tbsp butter, melted
  • 1 tsp vanilla
  • for the bread pudding -
  • 1 1/4 cup half and half
  • 3 eggs
  • 2 tsp vanilla
  • 1/2 cup sugar
  • for the ganache -
  • 1/2 cup heavy cream
  • 1 cup of chopped chocolate or chocolate chips
  • whipped cream

Instructions

  • prepare the banana bread -
  • pre-heat the oven to 350F.
  • whisk together the flour, sugar, baking powder, salt, and chocolate chunks
  • mix the bananas with the yogurt, eggs, butter and vanilla
  • gently fold the wet ingredients into the dry, and mix just until combined
  • spread into a butter and floured loaf pan
  • bake 50 - 55 minutes
  • cool in pan 5 minutes and remove to complete cooling on a rack
  • for the bread pudding, slice loaf once cool - discard the two ends
  • butter a baking/casserole dish
  • cube banana bread and place in baking dish
  • whisk the half and half, eggs, vanilla and sugar
  • pour over the bread , and let sit 15 minutes
  • bake bread pudding @350 F for 35 - 45 minutes(until set)
  • to make the ganache - heat the cream until simmering but not boiling, and pour over the chopped chocolate (or chocolate chips) let sit 5 minutes, and then whisk until smooth
  • serve the bread pudding with ganache and whipped cream ( I also used a little salted caramel on the plate as well)
