I don’t know what the weather is doing where you are, but here is it heating up and FAST. We went from gorgeous warm summer days to HOT overnight. I am not a big fan of temperatures over 85, and I would love to never see anything over 80 if I had my way. So when the temperatures rise to 105 or 106 I am not a happy camper. It’s even too hot to use the pool during the day unless it is completely shaded.
These hot days mean I am looking for as many no-cook meals as possible. Salads and sandwiches with fresh fruit are what we eat most days. Of course I still use my slow cooker, so when we have some leftover shredded chicken I’ll make Charlie his all time favorite sandwich. A chicken cordon bleu grilled cheese made with Sargento® Thin Sliced Swiss Cheese from Ralph’s.
The firs time I made these sandwiches fore the kids no one wanted to try them. “Chicken on grilled cheese, no thanks mom.” But I convinced Charlie to try just a bite. He loved it so much he ate his sandwich and then Stella’s. Now, when I ask him if he wants a sandwich he always asks if I have any chicken to add to it.
He’s in love with chicken cordon bleu grilled cheese and I know you will be too.
Ingredients
- for each sandwich -
- 1 Tbsp butter
- 2 slices of bread
- 1 Tbsp dijon mustard
- 2 slices of Sargento Swiss Cheese
- 2 slices of thinly sliced ham
- 1/4 cup of cooked, shredded chicken
Instructions
- melt butter in a skillet over medium heat
- spread Dijon mustard on both slices of bread
- top each slice with cheese, then ham
- add shredded chicken to one slice of bread, and then top with the other slice
- add sandwich to skillet, and cook 3 minutes (or until golden brown) flip, and cook another 2-3 minutes (until golden and the cheese melted)
- cut in half and serve immediately
