Chewy Chocolate Peanut Butter Cup Cookies

We are down to the final four weeks of school,

and I couldn’t be more excited.

Both kids have MAJOR projects due this week,

{is it just me or is this just as much work for the parents as it is for the kids}

and then it’s pretty much smooth sailing from there.

 {big sigh of relief}

Stella turned hers in  today,

Charlie’s is typed, and now he I just needs to build the display.

With the end SO close,

I thought we’d celebrate with cookies after school.

It is complete chocolate overload

{in a good way of course}




Chewy Chocolate Peanut Butter Cup Cookies


  • 1 cup of flour
  • 1 cup of cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 12 tbsp (1 1/2 sticks) of softened butter
  • 2 cups of sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/4 cup of mini (or chopped large) peanut butter cups


  • combine the flour, cocoa powder, baking soda, and salt
  • cream together the butter and sugar
  • add in the egg and vanilla
  • gradually mix in the dry ingredients
  • gently stir in the peanut butter cups
  • scoop tbsp size onto a lined cookie sheet
  • bake @350 for 10 minutes
  • cool 2 minutes on the sheet
  • {they are soft, so don't move them until they rest a bit}
  • move to a cooling rack
