If you are looking for a simple summer dessert, look no further.

Clafoutis is basically pancake batter poured over fruit and baked, making it great for dessert and breakfast.

{you know how I love my dessert for breakfast}

You probably already have most of what you need in the pantry, and with the exception of pitting the cherries

{note to self…GET a cherry pitter}




it comes together in just minutes. Seriously, I didn’t even decide to make dessert until Ian was starting the grill and I noticed the HUGE bag of cherries.  Dessert was  finished and coming  out of the oven as he brought in the meal.

Cherry Clafoutis ~ from Julia Child


  • 3 cups of pitted Bing or other sweet cherries
  • 1 1/4 cups of milk {I used buttermilk}
  • 2/3 cup of sugar {divided}
  • 3 eggs
  • 1 Tbsp vanilla
  • 1/8 tsp salt
  • 1/2 cup of flour


  • place the milk, 1/3 cup of sugar, the eggs, vanilla, salt, and flour in a blender
  • blend for about a minute
  • pour enough batter to cover the bottom of your pie plate or baking dish
  • cook over moderately high heat just to set the batter {about 2 minutes}
  • top the batter with the cherries
  • cover with the remaining 1/3 cup sugar
  • pour on the rest of the batter
  • bake @ 350 for about an hour
  • serve warm with powdered sugar

Luckily we didn’t eat all of it last night,

{even though Stella begged and begged}

and it made a terrific breakfast.
