I love carrot cake almost as much as I love breakfast, and  I love my breakfast. I’ve probably eaten carrot cake for breakfast more than a few times – it’s does have carrots and raisins in it, that makes it practically a smoothie right?

My family doesn’t like carrot cake at all. If I ever did make one I’d be forced to eat it all by myself. Not a terrible thing, but if you read this post here, you’ll understand my not wanting to eat an entire cake.

Last year I made carrot cake for one, and while that would be SO good right about now, my microwave is on the fritz, and I have been too busy lazy to go out and find a replacement.

Carrot cake granola is another personal fave, but that requires baking, and cooling, and when you want carrot cake NOW, it just doesn’t cut it,

and then while browsing pinterest, I saw carrot cake oatmeal cookies

so, I combined two of my faves, carrot cake and oatmeal, into one

now my morning bowl of oats can taste like my all time favorite carrot cake

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup of finely grated or shredded carrots
  • 1/2 cup water
  • 1/2 cup almond milk
  • 1 tsp raw honey (or maple syrup)
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • dash of salt (optional)
  • for topping - vanilla yogurt, chia seeds, crushed almonds or walnuts, raisins

Instructions

  • in a small saucepan combine oats, carrots, water, and almond milk,honey,vanilla, cinnamon, nutmeg, and salt
  • bring to a boil over medium heat
  • reduce heat to med-low, cook stirring occasionally until the oats have thickened (5 - 10 minutes)
  • serve topped with yogurt, seeds, nuts, and raisins and more milk if you prefer a less thick oatmeal

I left my carrots shreds a bit larger, but if you want them to be extra soft, make sure you grate them as fine as possible  – a box grater works well for this.

I always make my oats with almond milk, but feel free to use whatever milk you prefer – I’m thinking coconut milk with some shredded coconut on top would be SO good!
