Caramelized Banana Bread
The holidays are here,
and while excited, I am am feeling just a tad
overwhelmed.
There’s shopping, wrapping, baking,
decorating, card writing, and meal planning.
On top of that Stella’s birthday is two weeks before Christmas,
and Charlie’s is two weeks after.
Throw in a couple school projects, 3 b ball games a week, and a choir performance,
and I’m beginning to feel like the Grinch.
There just doesn’t seem to be enough time to get it all done.
To help with a few of my mommy chores, I look for recipes that multi-task.
dinners that provide leftovers for lunch
granola that is great for breakfast or lunch
and this banana bread
it is great toasted for breakfast
the kids love it in their lunch boxes for a snack,
and the caramelized bananas with brown butter glaze make it work even for dessert
Enjoy!
Caramelized Banana Bread with Brown Butter Glaze:
3 tbsp butter
3 bananas sliced
1/2 cup of sugar
2 eggs {lightly beaten}
2 cups of flour
1/2 tsp salt
1 tsp baking soda
melt the butter in a skillet over med-high heat
add the bananas and sugar
allow the bananas to caramelize {about 3 – 5 minutes}
stir briefly to prevent them from burning and sticking to the pan
transfer the bananas to the bowl of a mixer
blend the bananas with the eggs
add the flour, baking soda, and salt
spoon into a buttered loaf pan
bake @350 for about an hour
once cool make the glaze

brown 1 tbsp of butter in a small saucepan
remove from the heat and add 2 tsp cream and 1/3 cup of powdered sugar
whisk until the glaze is smooth,
and drizzle it over the bread
This sounds great! I love the idea of caramelizing the bananas first, I bet that makes them deliciously sweet! Thanks for the idea!
