Have you ever had one of those days
when you think things are plugging along nicely,
and then you look at the clock,
and it is already time to get the kids from school,
and you only got to half of your  list,
and you don’t have an after school snack.

That’s how it is for me more days than I’d like to admit.

Today was definitely one of those days.
I woke up feeling great
good run
energized
ready to tackle my messy desk
my closet
and the pantry

I was in the mood to clean out
and organize.

While working on my desk, I got sidetracked,
and then I noticed that my daughter’s bathroom mirror was filthy;
the laundry hamper was overflowing so I tackled that next.

I moved on to the pantry, only to realize that it was almost 2:30.
My bedroom closet didn’t even get a second look.

But even worse…
what would I do for snack

Good thing there’s pinterest,
otherwise I may never have seen the brownie/cake/cookie in a mug trick.

Fast, easy, and my kids think that I am the BEST.

Caramel Chocolate Chunk Cookie in  Mug
~adapted from No.2 Pencil

1 tbsp of melted butter
1 tbsp sugar
1 tsp caramel extract
pinch of salt
1 egg yolk
slightly less than 1/4 cup of flour
1 diced square of caramel filled chocolate {I used a Ghiradelli square}

in a mug combine the melted butter with the sugar
add in the caramel extract and the egg yolk {stir}
add in the flour and the salt {stir}
finally stir in the chocolate pieces

microwave on high for 40 – 50 seconds
{I used 45 and it was perfect}

freshly baked cookies in a matter of minutes
how cool is that
