Capellini with Tomatoes and Burrata

For me, July has been a whirlwind of activity. I’ve been away more than I’ve been at home, and even though I do enjoy traveling, my diet has suffered greatly.
After a full day spent sitting in either an airport or on a plane, I was ready for a simple home cooked meal. Simple being the key word; all that sitting around makes a girl TIRED.
This pasta is as simple as it gets.
Grilled or roasted cherry tomatoes and garlic
Basil from the garden
Capellini
and creamy burrata
Toss it all together and dinner is served.
Ingredients
- Capellini
- 1 pint cherry tomatoes
- 2 - 3 cloves of garlic {smashed}
- handful of basil leaves
- olive oil
- 4 oz burrata {sliced}
Instructions
- cook the pasta according to the package instructions
- while the water is boiling, toss the tomatoes and garlic with a bit of olive oil
- grill on high or roast {at 400} until the tomatoes begin to {pop} and the garlic becomes brown ~ about 5 minutes
- toss the pasta with the tomatoes and garlic
- top with the basil leaves and burrata
- {the heat from the pasta will make the cheese melt}
If you can’t find burrata, fresh mozzarella is a close substitution.
It must have done the trick, because I’m already planning our next vacation.

This sounds wonderful! I adore burrata paired with crusty bread and I’ve never thought to use it in a pasta dish. I’ll be making this for dinner one night this week for sure.
burata is good with anything in my book! but it was delicious in the pasta. Hope you like it.
