a fun twist on a breakfast favorite | buttermilk pancake bread

when it comes to comfort food, there are few things i enjoy more than pancakes. i used to make them for the kids every saturday morning without fail. now that they are teens, i can never be sure when they’ll finally appear out of their rooms. and it most certainly won’t be at the same time. enter buttermilk pancake bread.

buttermilk pancake bread is not the first time i’ve done pancakes in loaf form. i have been making this pancake bread for years. to change it up a bit sometimes i add blueberries and yogurt. made the night before, pancake bread is perfect for busy morning when time is in short supply.

then, i saw that trader joe’s had buttermilk pancake bread with streusel. how could i not try this at home?

Ingredients:

for the streusel topping (if using)
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/8 tsp salt
  • 3 Tbsp cold butter, cut into small pieces
for the bread
  • 2 cup flour
  • 3 Tbsp sugar
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1/4 cup butter, melted

Directions:

  • preheat the oven to 350°
  • grease a loaf pan and line with a parchment sling
  • to make the streusel combine the flour, sugar, and salt, then cut in the butter until you have coarse crumbs (i use my hands for this)
  • in a large bowl whisk together the flour, sugar, baking soda, baking powder, and salt - make a well in the center
  • in another bowl whisk together the buttermilk, eggs, and butter
  • add liquid ingredients into the center of the dry and whisk only until everything is combined - do not over mix
  • pour batter into prepared loaf pan and top with streusel (if using)
  • bake 40-45 minutes (pick inserted int he center should come out with just a few moist crumbs)
  • cool in pan 10 minutes, then carefully lift out and cool on rack (this bread cuts easier when cool)
  • can be kept covered at room temperature for up to 3 days

i may never make buttermilk pancakes any other way. this bread is the real deal. i have not been able to get my hands on the trader joe’s loaf, so i cannot compare the two. what i can say is that my buttermilk pancake bread tastes just like a stack of buttermilk pancakes.

you can make this bread with or without the streusel topping, (but i say go for the streusel). the bread itself is not overly sweet. try it as french toast when time allows. with the streusel this buttermilk pancake bread does not need a single thing. that being said, toasted with butter and syrup is addicting.

making the bread

first, while i have made buttermilk pancakes with practically every buttermilk substitute there is, i strongly suggest using actual buttermilk in this recipe. in a pinch substitutions work, but when it comes to flavor and consistency buttermilk pancakes or pancake bread need to be made with actual buttermilk.

do not over mix. i will be the first one to admit that more often than not i make my pancakes in one bowl. who wants to wash more dishes? to prevent over-mixing, the liquids really do need to be whisked together before adding to the dry ingredients.

i bake most of my quick breads in a pullman loaf pan because i love the look of the squared sides. but it is truly superficial, any standard loaf pan works for this recipe.

hopefully your new years resolutions do not include giving up carbs because this loaf is addicting ,and totally worth the extra miles on the treadmill.
