Buttermilk Glazed {baked} Chocolate Doughnut Muffins

Most days (most being the key word) I feel pretty darn good about myself.

Of course, we all like to look nice, but I am a mom, and more often than not, I am dressed like a mom.
I like looking like a mom.  I worked very hard to become a mom, and I wear my momminess with pride!

Then, I see someone I know, wearing a bathing suit I would never dream of even trying on.
She looks good, really good, like I could maybe give up eating to look that good.

Seriously, who am I kidding.  Food is too good, and I am dreaming of Smitten Kitchen chocolate doughnuts.
Really.  They are all I can think about.  Must. Have. Them. Now.

BUT…I am also thinking about that bathing suit.  Fried dough and swim suit season do not go together all that well.

Therefore, I present you with baked chocolate cake doughnut muffins.

So good and beach friendly – that is if you can stop yourself from eating the whole pan:)

For the doughnuts:
1 cup of whole wheat flour
1 cup of AP flour
3/4 cup of sugar
3/4 cup of cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
dash of nutmeg
1/2 tsp salt
1/4 cup of melted butter
2 eggs
1 tsp vanilla
1 1/2 cups of lowfat buttermilk

combine the dry ingredients
add in the vanilla, eggs, melted butter, and then the buttermilk
mix just until everything is combined

fill muffin cups 3/4
bake @350F for 20 minutes

1 cup of powdered sugar
1 tsp vanilla
2-3 tbsp of buttermilk

blend well and glaze muffins

Maybe not as “skinny” as my hard boiled egg breakfast today, but much more fun.
