buttermilk cornmeal waffles

Weekends were made for waffles, and lots of lingering over pots of coffee, but mainly waffles like these crispy buttermilk cornmeal waffles.
I got my first waffle iron as a wedding shower gift 19 years ago. It quit a few months back and I rushed out immediately to buy a new one. I know that for many the waffle iron is an item that lives in the far back of the cabinet, never to actually make it to see the light of day. For me, it is one of the kitchen tools I use the most.
My family loves waffles, and I love making them just as much as they love eating them. Waffles may seem like something to save for special occasions like mother’s day (hint, hint) but truthfully these buttermilk waffles take only minutes to whisk up. I’ve even been known to make them on busy school mornings. They are that fast.

buttermilk cornmeal waffles
Ingredients:
- 1 cup AP flour
- 1/2 cup cornmeal
- 2 Tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups buttermilk
- 2 eggs
- 2 Tbsp butter, melted
- 1 tsp vanilla
Directions:
- preheat your waffle iron (spray with non-stick spray if needed)
- in a large bowl whisk together the flour, cornmeal, sugar, baking powder, baking soda, cinnamon, and salt
- in another bowl whisk together the buttermilk, eggs, butter, and vanilla
- pour wet ingredients over the dry and whisk just until combined
- pour batter in the center of iron (amount will depend on type and size of iron), close, and cook (my iron takes about 3 minutes) until golden and crisp
- keep waffles warm in a 200 degree oven while you finish the batter
- serve with your favorite toppings
There’s no wrong way to top these buttermilk cornmeal waffles. Stella love nutella and strawberry, or jam and butter. Charlie loves them swimming in syrup. But for me, thees waffles are best with just a bit of butter and some fresh blackberries.
However you top them, I know these buttermilk cornmeal waffles are sure to win over the entire family.
