Ready or not it is back to school time.

Normally I am one of those moms that has had enough summer by the time August rolls around. The kids are driving me crazy. I am over the extreme heat, and I cannot wait to get back to a normal routine.

This year, that is not really the case. We have been having so much fun this summer, the time has literally flown right on by us. I cannot believe it is August and time to go back to school. Denial is setting in, and I simply refuse to believe that in days I’ll be back to our crazy football, soccer, homework, and dinner routine. And lunches…really packing lunches has never been my favorite activity.

My kids are not big on sandwiches unless they are grilled. Charlie has eaten a chicken cordon bleu grilled cheese almost every day for lunch this entire summer. So my plan for the school year is to grill them sandwiches. When you wait for the sandwiches to cool completely (this is very important), and wrap them in a paper towel before placing them in a lunch bag, you keep them from getting soggy. They may not be warm, but they are definitely delicious.

To get the school year off with a bang, I am sending them to school with buffalo style Hillshire Farm turkey paninis with apples and blue cheese. No boring lunches here.

for each sandwich -

  • 2 slices of bread
  • 2 slices of cheddar cheese
  • 4 apple slices
  • 2 ounces of Hillshire Farm® oven roasted turkey breast (4 or 5 slices)
  • buffalo sauce
  • 1 ounce of crumbled blue cheese


  1. heat panini press
  2. place cheddar cheese on bread, top with apple slices, turkey, buffalo sauce, and blue cheese
  3. top with remaining cheddar slice and slice of bread
  4. place sandwich in the press and cook until the cheese is melted and the bread golden brown - about 3 - 4 minutes
  5. enjoy hot, or to pack for lunch, cool the sandwich completely, wrap it is paper towel, and place in a a zip-top lunch bag. keep the sandwich in the refrigerator until ready to pack

If you don’t have a  panini press, you could make this just as easily in a skillet over medium heat. This buffalo style turkey panini isn’t just for lunches; it would make a delicious dinner or homework helper for after school.
