Brownie Ice Cream Sundae Cups

Just like chocolate chip cookies always taste better with milk,
I find that brownies always taste better when topped with
ice cream
fudge
whipped cream
and a few peanut butter cups
these little sundae cups are made ahead of time
{making them great for guests}
and so much easier than cutting and scooping and topping
individual sundaes
we all loved them;
they’re like mini ice cream cakes with a brownie base
and the flavor combinations are almost endless.
we went with the classic chocolate and peanut butter,
but I am already picturing a snickers brownies sundae.
Ingredients
- 1 package of brownie mix
- {plus ingredients to make the brownies}
- chocolate peanut butter ice cream {very soft}
- fudge sauce
- mini peanut butter cups
- whipped cream
Instructions
- prepare the brownie batter
- scoop 1 tbsp into lined muffin pans {you should get 16}
- bake @350 for 15 minutes
- place 1 scoop of ice cream on each brownie cup
- top with 1 tbsp fudge and a few mini pb cups
- place in the freezer until hardened {at least 2 hours}
- top with whipped cream and chopped PB cups just before serving

When I was little and my mom would make brownies, I was the only daughter who asked for a scoop o cie cream with it. So you can imagine how much I am loving these sundae cups!
