just when I thought I found my favorite chocolate chip cookie, these brown butter butterscotch chocolate chip cookies swept in to take their place

I have gone  from never baking cookies, to baking a batch or two nearly every week. You can never have too many cookies at home right? At least that’s what the kids think.

They have always been partial to chocolate chip, probably because when they were little that was all I ever baked. These brown butter chocolate chunk cookies were declared by the kids the best cookies ever  until they tried my grandma’s peanut butte cookies. Even without chocolate chips they disappeared the day they were made.

It’s been gray and rainy here the last couple of days, and that has left me wanting to bake. Rainy days and baking just seem to go together. I have been completely obsessed with this molasses bread, so I baked another loaf for toast and sandwiches. I made french bread to go with the pot of soup for dinner, and with so many bags of chocolate chips in the pantry that the shelf is overflowing, literally, they fall out at you the moment you open the door, cookies seemed to be in order.

Because brown butter makes everything taste better, that’s what these butterscotch chocolate chip cookies start with. To the brown butter you add brown sugar to get that butterscotch flavor. I absolutely love butterscotch and feel it often gets overshadowed by caramel. Not that caramel isn’t delicious, but butterscotch has always been my favorite. The butterscotch flavor is subtle, but there, and I am pretty certain these are my new favorite chocolate chip cookie.

Ingredients:

  • 7 Tbsp butter, divided
  • 3/4 cup brown sugar, packed
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips

Directions:

  • preheat oven to 375 degrees
  • in a small saucepan, brown 5 Tbsp butter (see how to brown butter here)
  • whisk together the flour, baking powder, baking, soda, and salt
  • remove butter from heat, and whisk in additional 2 Tbsp butter
  • using the paddle attachment of a stand mixer, beat butter with brown sugar, egg, and vanilla
  • stir in flour, and then fold in the chocolate chips
  • scoop cookie dough into balls (I make mine 1 Tbsp)
  • place cookies onto a silpat or parchment lined baking sheet
  • bake 10 minutes
  • cool cookies on baking sheets 2 minutes, and then complete cooling on racks
   

This recipe is for a small batch, making 18 cookies, but you could easily double it. We just happen to also have 24 owl cupcakes in the house so 3 dozen cookies seemed excessive.
