cheers! we made it to another weekend. i’ll be spending my weekend in a gym watching an unknown number of basketball games. i also will be packing a few slices of this brown butter banana cinnamon bundt cake in my bag. no snack bar junk food for me this weekend.
having to be up early both saturday and sunday makes me a little crabby on this lovely fall friday. don’t get me wrong, i love watching stella play basketball. when she graduates next year i’ll miss it. i also miss mornings without an alarm.
either way, i’ll be there cheering her on. with snacks of course. this banana cinnamon bundt cake can be breakfast (hello it’s fruit) or a post game snack. maybe reward yourself for getting up early on a saturday with a slice for dessert. there’s no wrong time to enjoy a slice of cake.

brown butter banana cinnamon bundt cake
Ingredients:
- 4 Tbsp butter, browned and cooled slightly
- 4 very ripe bananas. mashed
- 2 1/4 cups flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/4 cup canola oil
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 3/4 cup plain yogurt (i use this whole milk yogurt)
- 2 tsp Pure Vanilla Extract
- powdered sugar and cinnamon for dusting (optional)
Directions:
- preheat oven to 350°
- grease and flour a Tube
or Bundt Pan
- in a large bowl whisk together the flour, cinnamon, baking powder, baking soda, and salt
- in the bowl of a stand mixer fitted with the paddle beat the brown butter, oil, and sugars until light and fluffy
- add the eggs one at a time, then add the yogurt, vanilla, and mashed banana - making sure everything is completely combined
- add the flour and mix until sooth
- mix with a spatula a few times making sure to get to the bottom of the bowl
- pour batter into your prepared pan and bake 45-55 minutes - a pick inserted into the center should come out clean
- cool in pan 15 minutes, then invert cake onto rack to complete cooling
- dust with powdered sugar and cinnamon before serving (if using)
how to make the best bundt cake
let your cold items come to room temperature before mixing. ingredients will blend more easily and you will end up with a better texture.
mix your dry and wet ingredients separately. they will blend faster and you can avoid over mixing.

Great recipe. Added a slightly overflowing tbs of molasses, an extra tsp of vanilla., and 1 cup chopped toasted pecans and used a basic vanilla glaze to dress it up. Very moist and flavorful. Family loved it
