I have always loved the fourth of July.




and my family always had a HUGE party

{complete with explosions that would put out the neighborhood street lights}

Our town also puts on a spectacular rodeo, and the bull run happens to take place on my street; it is quite the event.

But you know me, holidays are all about the food,

and while apple pie may be America’s pie,

when I think patriotic it’s Boston Cream Pie that comes to mind.



However, the last thing I want to do when the bulls are outside playing in my front yard, is to be inside cutting and serving.

That’s where cupcakes come in mighty handy.

Boston Cream Pie Cupcakes ~ adapted from Martha Stweart


  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 salt
  • 1/2 cup milk{whole}
  • 6 tbsp Greek yogurt {plain or vanilla}
  • 3 eggs
  • 1 cup of sugar
  • 1 tsp vanilla
  • Vanilla Cream
  • 1 cup of Greek yogurt
  • 1/4 cup of vanilla protein powder
  • Chocolate Ganache
  • 1 cup of chopped dark and bittersweet chocolate
  • 1/2 cup cream


  • Preheat oven to 350
  • whisk together the flour, baking powder, and salt
  • beat eggs and sugar until light and airy {about 5 minutes on med}
  • Mix in the dry ingredients
  • Beat in the milk, vanilla, and yogurt
  • fill lined muffin cups halfway
  • bake for 15 minutes
  • cool and make a hole in the center {using the handle of a wooden spoon - twist to get a large enough opening}
  • blend together the yogurt and the protein powder
  • fill the center of each cupcake
  • chill for about 30 minutes
  • to make the ganache bring the cream to a simmer
  • pour over the chopped chocolate
  • allow to sit for a minute
  • whisk {begin in the center and make your way to the edge of the bowl}
  • pour the ganache over the chilled cupcakes
  • smooth and serve

Just look at that ganache!!

This recipe makes 18 regular size cupcakes, but

I made 12 and then 3 LARGE ones ๐Ÿ™‚

{guess which I’ll be eating}

Because these are made with only Greek yogurt, no butter at all,I’m not even going to feel guilty!
