If you have read this blog more than once or twice, you already know that breakfast is a big deal in our house. It’s the one meal that even my fussy eater loves, so we make it count. Even though I have teenagers, I make them breakfast every morning. I know that there are countless articles explaining why teens should be responsible for getting their own breakfast before school. I don’t happen to agree with them. They know how to do it if they had to. Especially Stella, she is quite self sufficient, but I like doing it, and I know they really appreciate it.
Pancakes and waffles are big breakfast faves around here, but there are days when there just isn’t time, so I make pancake bread the night before. I am a BIG fan of the make ahead breakfast.
Yogurt is also another of our breakfast go-tos. Charlie and Stella have always loved yogurt, so it is something we have in the fridge all the time. Now, I’ll be honest, I prefer to make my own yogurt, and love plain greek style yogurt with my berries, but again there isn’t always time to make it. Dannon’s new whole milk yogurt is the next best thing. With fewer and more natural non-GMO ingredients, Dannon is a brand I can trust. I also happen to prefer whole milk to low fat or fat free varieties.
Not only are all 11 flavors delicious (the blueberry is one of our favorites) yogurt makes a healthy breakfast or snack, and is easier to digest them other dairy products for those with food sensitivities. Plus, yogurt is a great substitute in baking.
This blueberry yogurt pancake bread replaces most of the milk and half of the sugar in the traditional recipe with dannon whole milk blueberry yogurt. The yogurt adds a tangy flavor similar to buttermilk pancakes, and this loaf bakes up extra moist with loads of blueberry flavor.
blueberry yogurt pancake bread
- 2 cups flour
- 2 Tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup dannon blueberry whole milk yogurt
- 1/4 cup plus 2 Tbsp milk
- 2 eggs
- 1/4 cup butter, melted
- 2 Tbsp maple syrup
- 1 tsp vanilla
- 1/2 cup fresh blueberries
- butter a loaf pan
- preheat oven to 350 degrees
- in a large bowl whisk together the flour, sugar, baking powder, and salt
- in another bowl whisk together the yogurt, milk, egg, butter, maple syrup, and vanilla
- pour the wet ingredients over the dry and mix just until combined
- gently fold in the blueberries
- pour batter into the prepared loaf pan and bake for 50 minutes
- cool in pan 5 minutes, then move to a rack to cool
- loaf slices easier when cooled
