you know it’s going to be a good day when sprinkles are involved. this easy to make birthday cake banana bread will make any day feel like it’s your birthday
the january blahs have set in. we spent the weekend taking down christmas and trying to get over this horrible virus that took us all down last week. it’s gray and rainy. the kids are back to school today, and the house is entirely too quiet.
and today is charlie’s birthday. his 18th birthday. i am now the mother of an adult. i have no idea how that is even possible. i swear it was just yesterday that we were rocking out to thomas the tank engine songs. so to help with the gloom that’s hovering over the house today i made banana bread that tastes like cake and of course… sprinkles. you can’t be sad when there are sprinkles. even if your baby turns 18 today.

birthday cake banana bread
Ingredients:
- 4 large ripe bananas, well mashed
- 2 eggs, at room temperature
- 1/2 cup oil
- 1 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1/2 tsp butter extract
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1/4 cup sprinkles
Directions:
- spray a loaf pan with non-stick cooking spray
- preheat the oven to 350 degrees
- in a large bowl mix the bananas,eggs, oil, brown sugar, and extracts
- whisk together the flour, baking soda, baking powder, and salt
- add the dry ingredients to the wet and stir to combine
- fold in the sprinkles, and pour into the prepared loaf pan
- bake 45-55 minutes (or until a pick inserted in the center comes out clean and the top is dark golden brown)
- cool in pan 15, then remove and complete cooling on a wire rack
i am an equal opportunity banana bread enthusiast. i’ve never really tried one that i didn’t enjoy. with nuts or without, i do love a good slice loaded with chocolate chunks and when you roast the bananas…yum. but when it comes to fun nothing tops this birthday cake banana bread.
the extra banana makes this loaf incredibly moist and sweet. the almond and butter extracts create the one of a kind cake batter flavor without the need for a cake mix, and the sprinkles just make it festive.
