You know it’s been a great holiday when even your kids are asking for fruit and salad for dinner. Stella suggested a ban on all sugar, and she’s my sweet tooth.
Yes, it was that good of a vacation. We spent the holiday eating our way around Buffalo. The kids experienced Anchor Bar wings, Ted’s Hot Dogs, Mighty Taco and some of the best small plates in the city.
But now it is back to work, school, and healthy eating. Oh boy do we need that. Vacation is always wonderful, and getting back to reality is tough, but really getting back on schedule feels good.
My plan for this new year is to stay on top of things. It’s easy to start the new year eating better, being more organized and then…life happens. Before you know it it is June and all those New Year plans have long been forgotten.
Finding easy ways to eat better is on top of my list this year. Starting with this easy and better for you blueberry pancake. Made with whole wheat flour, coconut oil, blueberries, and ready in just 90 seconds, what could be better.
We love pancakes, and I make them for the kids all the time, but for myself I don’t usually bother. Who wants to get the griddle out and make a whole batch? Not me that’s for sure.
This pancake for one is the perfect answer.
- 1/4 cup whole wheat or white whole wheat flour
- 1/2 tsp baking powder
- dash of salt
- 1 egg
- 2 Tbsp milk
- 1 Tbsp coconut oil, melted
- 2 Tbsp syrup
- 1/4 tsp vanilla
- 2 Tbsp blueberries (fresh or frozen)
- combine the flour, baking powder, and salt in a microwave safe mug
- whisk together the egg, milk, coconut oil, syrup, and vanilla
- add wet ingredients to the dry and mix well
- top with blueberries
- microwave for 60 - 90 seconds (check after 1 minute)
- serve with syrup
