The BEST Whole Wheat Pizza Dough

Whole Wheat Pizza Dough
I don’t think I have ever shared with you my pizza dough recipe.
I make is so often {every Friday for the last 14 years} that I don’t even measure anything anymore.
But just in case you’d like to measure, I’ll share it with you.
Ingredients
- 1 envelope active yeast {I prefer Red Star}
- 1/3 cup of warm water {about 100 degrees}
- 1 tsp sugar
- 1 1/2 cups of Whole Wheat Flour
- 1 1/2 cups of Bread Flour
- 1 tsp salt
- 1 cup of warm water
Instructions
- in a small bowl sprinkle the yeast and sugar over 1/3 cup warm water
- stir and let sit for 5 minutes
- in the bowl of a stand mixer combine the flours and salt
- make a well in the center, add the yeast and additional water
- knead using the dough hook {you can also knead by hand of course} until you have a smooth dough
- shape into a ball, and allow it rise in a lightly oiled bowl {cover with plastic wrap or a clean kitchen towel} for 1 - 1 1/2 hours
- punch the dough down, divide into sections {if making more than one pizza} and let rest 15 minutes
- roll and shape dough, prick the center to create a thicker crust area, and top
- bake in a pre-heated oven @450 for 15 - 18 minutes
You can use all whole wheat flour, which I have done, but usually I do a 50/50 blend.
You can divide the dough into two medium pizzas, or make one super huge; we make two med/small and one medium so that everyone gets exactly what they want on it. Heaven forbid if a pepperoni touches a piece of Stella’s cheese. Even worse a vegetable…the horror.
This dough also makes great calzones, stuffed pizza bread, and pizza muffins.
You can even use this dough on the grill. Simply cook the pizza on one side for about 8 minutes, flip, top, and wait for the cheese to melt.
Last Friday was Valentine’s day, so of course we had heart pizzas.
I do become BORED with pizza night 3 pizzas x 14 years of Fridays = A LOT of pizza

Mmm looks lovely! I typically top my pizzas with mushrooms, onions, and green peppers. Occasionally some fresh pineapple. But I’m a pretty boring pizza eater haha.

I have tried many different whole wheat pizza dough recipes, only to be left with a really thick and dense bread. So I’m really interested to try your recipe. After 14 years, it must be a good one!!

That is a serious amount of pizza! 14 years? That is incredible, Heather. I’ve always wanted to try my own whole wheat dough. Your yeasted recipes are always so doable – not too many ingredients or steps. I can’t wait to try this!

Heather, this looks SO good! We have been having an on again-off again weekly pizza night and are always looking for good dough recipes. I love the idea of incorporating whole wheat and will definitely give this a try!
sometimes I get really tired of pizza night, but the kids look forward to it all week -so I’ll probably be making them forever 🙂

I am ashamed to admit that I’ve never made pizza dough … it just seemed out of the question when we had 3 big teenage boys at home … Pizza Hut is only 4 blocks away … we would order 3 large pizzas and hope it was enough!
I could not even imagine – that would take a lot of pizza, but homemade crust is much easier than you think
This recipe looks delicious! My kids don’t even complain about veggies on pizza, so ours is usually topped with pepperoni and tons of veggies! I think this weekend it needs to be heart shaped! 🙂

Hi thanks for sharing, but I think theres too much water … I had to add more flour… but at the end it was the best pizza dough I ever made… 🙂
I have tried many pizza dough recipes and have finally found the perfect one. I make this will just all purpose flour and usually freeze half of the dough in a Ziploc bag for future use. Thank you very, very much for such a great recipe!!!!!
