Can you ever have too many brownie recipes? I don’t think so.

I’ve made them plain, and with biscoff.

I’ve made them out of peanut butter cups and stuffed with peanut butter cups. With flour, and without. There have even been brownies with avocados.


Better for you Fudge Brownies


I wanted to make a basic fudge brownie, but one that was a  little better for you, it is almost beach season after all.

I started with this recipe here at cooking light {my go-to for all things healthy}

My son won’t  eat anything with nuts, so those had to go. I used less sugar, and cut the butter in half by using Tillamook Farmstyle Greek yogurt.

I was not sure what to expect, as a few previous recipe  attempts left me seriously discouraged.  MAJOR fails. But these brownies were moist, fudgy, plenty sweet, and even though I left  out the chocolate chunks, SUPER chocolaty.

The BEST Better for you Fudge Brownies

Yield: 16 squares


  • 3/4 cup AP flour
  • 1 cup of sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/3 cup of Greek yogurt {I used Tillamook Farmstyle Greek plain}
  • 3 Tbsp butter {melted}
  • 1 tsp vanilla
  • 2 eggs lightly beaten


  • combine all of the dry ingredients
  • stir in the yogurt, the butter,vanilla, and the eggs
  • spread in a lined 8x8 or 9x9 baking pan
  • bake at 350 20 - 25 minutes {test for doneness}
  • cool completely in pan before cutting
