Berries and Creme Panini

Sometimes, the best recipes happen by accident.

Like my lunch today.

This past weekend turned out to be a pretty busy one,

and I never got to the grocery store.

So now here we are,


the laundry needs attention,

the bathrooms really need attention,

and I’m on a mission to get everything caught up.




Then lunch time hits, and I still have not gotten to the store,

but I know better than to shop hungry.

I’m not very fussy when it comes to what I’ll eat for lunch,

so my lunch is not usually share worthy,

especially because I’m usually eating and working at the same time.

It’s pretty common for me to eat whatever bits of leftovers I can find.

Today it was  berries, some  creme fraiche, and a few slices of bread from last nights salad.

it may not look like much,

but after a few minutes in the panini press,

it was heaven on a plate,

and the best lunch I’ve had in a long time.

Not completely blog worthy,

but it was delicious, so I thought I’d share it.


Berries and Creme Panini


  • 2 strawberries sliced
  • 5 - 6 raspberries
  • 2 tbsp creme fraiche
  • sprinkle of brown sugar
  • 2 slices of good bread


  • spread 1 tbsp of creme fraiche on each slice of bread
  • top one slice with the berries
  • sprinkle on the brown sugar {or honey}
  • top with the remaining slice of bread
  • cook in the panini press for about 4 minutes {or toasted to your preference}
  • be careful -- the berries will be VERY hot
