Basil Walnut Pesto
I’m not sure why I don’t make pesto more often.
Literally it takes like a minute to make, and we are one of those families that could eat pasta just about every night of the week.
I could live on this pesto linguine alone.
But it occurred to me that when I shared that recipe, I never included the recipe for my all time favorite pesto. Total oversight on my part, sorry.
So here it is, about as simple as you can get.
I’m not the biggest fan of pine nuts, and the lovely people at California Walnuts hooked this girl up BIG, so I simply swapped one for the other.
BEST PESTO EVER in this girls opinion, but try it and you be the judge.
- 2 cups of basil leaves
- 3 cloves of garlic
- 1/3 cup of walnuts
- 1/2 cup of olive oil
- salt to taste
- 1/4 cup freshly grated Parmesan
- Combine the basil, garlic, and walnuts in the bowl of a food processor
- pulse until chopped
- drizzle the oil in while the food processor is running
- taste for seasoning
- add the cheese and pulse a few more times
The sauce of course is great for pasta, but I also love it with my caprese salad, and as a pizza topping.
