back to school means it back to easy grab and go breakfasts and snacks like these banana trail mix muffins
we did it. we survived another back to school season complete with marathon shopping trips, multiple hair and nail appointments, orthodontist, and a really fun trip to the dmv.
but after all the crazy i am happy to report the kids are both thrilled with their classes, teachers, and being back with all of their friends; stella was so excited for her first day of high school that she was ready a whole 20 minutes early. that has never happened. ever! she called a few times during the day with questions, but all in all she loved her first day and didn’t get lost on her way to classes which is harder than is sounds seeing as our high school covers 65 acres. even i get lost and i have been a parent at the school for two years already.
with the kids in school and a quiet house to myself for nearly 7 hours i am in the mood to bake. it doesn’t matter that it has been nearly 100 degrees for the last two days, that the a/c has not clicked off once since 6 am, school = fall, and fall = baking.
i had planned on making zucchini bread or muffins. with summer coning to and end i’m afraid that my zucchini plants are nearing the end as well, so i can’t seem to part with any for baking. they are so good on their own. but ripe bananas, those i’ve got a bowl full of. i also had some leftover bulk bin trail mix;if it’s so good in pancakes why not banana muffins right? i don’t usually add nuts to my banana bread or muffins because the kids are not fans of anything baked with nuts in it. but ian and i love them, and i always feel a bit better about indulging in a sweet treat if it includes something of nutritional value.
not that i am claiming these banana trail mix muffins are healthy. there is a hefty dose of brown sugar, butter, and chocolate from the trial mix, but they are delicious and smell absolutely heavenly as they bake.

banana trail mix muffins
Ingredients:
- 1 cup of trail mix, roughly chopped
- 2 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 3 ripe bananas, mashed
- 1 egg
- 3/4 cup brown sugar
- 1 stick of butter, melted
- 1 tsp vanilla
- 1/4 cup milk
Directions:
- preheat the oven to 350 degrees
- combine the flour, baking powder, and salt and set aside
- whisk together the banana, egg, sugar, butter, and vanilla,add the flour and milk and blend well, then fold in the trail mix
- spoon into a well greased loaf pan or muffin pan with liners
- bake muffins 20-25 minutes 45-60 for a loaf (cool in loaf pan 15 minutes, and the move to a rack to complete cooling before slicing)
i love baking muffins for easy grab and go breakfast or snacks, but the batter could easily be baked in a loaf pan; simply increase the baking time to 45-60 minutes.
if you don’t plan on making your own trial mix, choose one with chocolate chips or chocolate covered fruit over m&m’s. mixed nuts could also be used in place of the trial mix, but i love the little bits of dried fruit and chocolate in the muffins and think you will too.
