I hope the new year is treating you well. Today was our first day back to school and work after after a wonderufl holiday. Moving at Christmas time may not be for everyone. It was crazy, and busy, and exhausting but I wouldn’t have done it any other way.
We got keys late on December 22. The kids and I moved as many boxes as we could that night, and then again the next day while we waited for Ian and the truck. Appliances (that I am in LOVE with) arrived at 5 on the 23rd. We were putting beds together at midnight and hanging Christmas lights on Christmas eve.
And every minute of it was magical; I was so sad to see everyone head off this morning.
But all good things must come to an end, and after a few weeks of eating pretty much anything we wanted, it is time to get back on the healthy track.
Banana bread is one of my all time favorite snacks, but I am trying really hard to cut back on the bread, no matter how delicious. This granola tastes just like my beloved banana bread, but healthier. It is also a delicious addition to my morning yogurt and fruit.
- 2 ripe bananas well mashed
- 2 Tbsp honey
- 3 cups of rolled oats
- 1/2 cup almond meal
- 1/2 tsp salt
- 1/2 tsp cinnamon
- in a large bowl combine all of the ingredients
- spread on a baking sheet in a thin layer
- bake at 350 for about 30 minutes (I like to give it a stir half way through the baking time)
- allow to cool and then crumble
- store in an airtight container
I usually add almond meal to my granola, but if you want a more classic banana bread taste, try adding ground walnuts or pecans. Both are delicious, and for dessert I love adding a few chunks of dark chocolate or a dab of peanut butter.
