We have been LOVING our summer schedule, or should I say lack of a schedule.

we eat late

stay up late

sleep late

The kids are so busy outside, that it’s almost impossible to get them to come inside for food.

{not that I’m complaining, it’s been VERY quiet}

But all that playing requires energy.

I was asked to tryย Vi-Shape shake mix, and not really knowing what to expect, I was SO very pleasantly surprised that the sweet cream flavor smells, and tastes, like cake batter.

The shake mix is basically protein powder, and cake batter…well, I knew I’d have to bake something with it.

Granola bars make a great grab and go snack, and with the added protein, I don’t feel as bad about the kiddos not wanting to come in for lunch.

The banana bars are part bread, part granola bar, and entirely delicious.

 

Banana Bread Bars

Ingredients

  • 1 cup of rolled oats
  • 1/2 cup of Vi-Shape {or other protein powder}
  • I used the sweet cream flavor, but vanilla would also be delicious
  • 1/2 cup of almond meal
  • 2 medium ripe bananas {mashed}
  • 1/4 tsp salt
  • 1/4 cup of dark chocolate chip {optional}

Instructions

  • combine the dry ingredients, and add to the banana
  • stir in the chocolate chips
  • press the batter into a lined 8x8 square pan
  • bake @350 for 20 minutes
  • allow to cool completely before cutting into bars

I added just a few chocolate chips to keep the kids interested ๐Ÿ™‚

Now ย if I could just get them interested in dinner as well.
