Banana and Nutella Oatmeal Cookies

Do you ever feel like there is SO much that you want to get done in a single day,

a  lot that you actually look forward too,

but you just don’t quite fully succeed in proper  time management?

{yes…my hand is up}

I teach writing classes for homeschool students most mornings,

plus I try to run at least 5 days a week,

add in the regular household duties,

and I already have a pretty tight schedule between school drop-off and pick-up.

I try to get some baking done,

photos if I’m lucky,

and today two lovely young female missionaries were stopping by,

a visit that I was excited for,

but knew would be a tight squeeze.


But that’s what we do right,

juggle multiple activities at once?


Well, I thought I was off to a great start.

classes were over,

I got in a good 3 1/2 mile run

bed sheets were changed

laundry was going,

and I had a whole 30 minutes before the girls would arrive.


Plenty of time to make cookies,

even if it was a total recipe experiment.

However, that little overhang of parchment paper that I was too busy to notice

decided to catch fire in the oven,

jumping to the next pan with it’s parchment paper.

As I glanced at the flame that I should NOT be seeing in the oven window,

my first thought…

my cookies are going to be ruined,

followed by…

what will they think of a food blogger that burns simple cookies.


Luckily, the two young women brought MUCH peace and calm into my crazy kitchen,

and my cookies were unharmed.


They happen to be delicious as well.

Banana and Nutella Oatmeal Cookies


  • 1 mashed ripe banana
  • 2 eggs
  • 1/2 cup of brown sugar
  • 1/2 cup of nutella
  • 4 cups of rolled oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 dark chocolate chunks {optional}


  • beat the eggs with the sugar
  • add in the banana and the nutella
  • blend well
  • stir in the oats,baking powder, salt, and chocolate if using
  • scoop 2 tbsp size balls onto a parchment lined sheet
  • bake at 350 for about 10 minutes
  • cookies will be soft, leave them on the hot baking sheet for another 10 minutes


From now on I’m going to try and take things a bit slower

{and measure my parchment more accurately}
