Baked Gnocchi with Tomatoes and Mascarpone


If you are anything like me,
you have hundreds of recipes lying around
just waiting to be made,
and yet you make the same things over and over.

I am a recipe hoarder.
My cabinets are FULL of cookbooks,
I print countless recipes from my favorite blogs, and
my to-be-made list is HUGE.

Still, I make the same meals.

Truth be told, it’s not all my fault.

I may have created the pickiest eater on the planet.
I tend to stick to things I know think she’ll like.

Lately, the fussy one  has declared that she is a vegetarian.
However, vegetables are not her favorite things to eat.

So it’s time to try some of the items on my “to do” list.

Gnocchi it is.
I have made gnocchi before,

and while Ian and I loved them,
they were  not the kids favorite

{big surprise there}

This time I decided to stick to the basic gnocchi recipe

{this is the recipe I used}

Wanting everyone to eat,
I made these individual servings
{things are  just cuter made mini}

topped each dish with tomato sauce
added about 1 tablespoon of Mascarpone
and a bit of shredded mozzarella

bake at 350 for about 20 minutes
and finish under the broiler for about a minute
{just until the cheese is golden and bubbling}

One down, too many to count to go:)
