I wish that I could say doughnuts were my only weakness.
Not true.

Fries.

I love fries.

Even worse, I love fast food fries.
There has got to be something in all of those “ingredients” that is addictive.

At home we often will bake our own fries, and sometimes I’ll even sneak sweet potatoes in for a bit of nutrition, but I know that potatoes are certainly not the most nutritious dinner side.

Avocados are just the opposite.  They are packed with good stuff, and most of my family loves them {picky eater included}.

I’ve seen a few variations of avocado fries, and while I do not enjoy the mess from frying, baked avocados didn’t really sound like a great idea.

The fries were crispy on the outside and creamy on the inside.  Served with chipotle ranch (just ranch dressing with chipotle sauce mixed in) they were SO delicious!

Frying wasn’t that bad either.

For the fries:
2 avocados
1/4 cup of flour – seasoned with just a dash of salt
2 eggs lightly beaten
1 1/4 cups of bread crumbs (panko was recommended, but I chose to use tortilla chip crumbs)

canola oil for frying

heat the oil – use about an inch and 1/2 –  to 375
cut each avocado in half and remove the pit
cut each half into fours
dip each fry in the flour
then the egg
and finally the crumbs
fry 4 at a time
they will cook very quickly (under a minute) if the oil is hot enough
drain on a paper towel
keep warm in a 200F oven while you fry the others

I know they don’t taste like french fries, but you can eat them all and not feel quite as guilty.
A healthy food is still healthy after it’s been fried right?
