Last week

when I bought avocados to make

these brownies

I may have over-purchased just a bit,

{I do this quite often}

and I was desperate to find ways to use them before they became too ripe.

I could have made more brownies, but then that would not really fit into my get fit for Vegas plan.

Have you ever tried to eat  just one…does NOT happen.

And then I remembered this pasta recipe. I made it a few years ago, and we really enjoyed it.

{of course I changed it up a bit, you know how I feel about following directions}

It’s perfect for summer, because the pesto requires NO cooking, and pasta is one of those easy go-to family meals; add a salad and you’re done.

Avocado and Arugula Pesto ~ adapted from Giada De Laurentiis


  • 2 medium avocados
  • 2 cups arugula
  • 1/2 cup basil leaves
  • juice from one lime
  • 2 cloves garlic, peeled
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Parmesan cheese for serving


  • combine everything in the bowl of a food processor, and pulse until smooth
  • toss with your favorite pasta {we used linguine}
  • serve with the Parmesan
