Apple Streusel Pancakes

We are BIG breakfast fans,
and I think it’s safe to say that three of the four of us would eat
breakfast for dinner every night.

and if it wasn’t for french fries and breakfast,
the fussy one would STARVE.

So…last week, when I was at my favorite store, {Target}
I saw a box of streusel pancake mix.

I’m not a pancake mix kind of girl, but the idea sounded like a great one.
I knew I’d have to try it at home.

These do not disappoint.

Sweet, but not overly, with just a hint of apple.
I topped them with sauteed apple slices…
and of course a little syrup.

Move over chocolate chip,
there’s a new pancake in town.


Apple Streusel Pancakes:

for the streusel – – combine 1/8 cup of flour
1/8 cup of brown sugar, and 2 tbsp cold butter
to create a crumble

Pancake Mix:

1 cup of flour
1 tsp baking powder
2 tbsp sugar
1/2 tsp salt
1/2 tsp cinnamon
1 egg
1 cup of milk
2 tbsp melted butter
1 diced apple

combine the dry ingredients
whisk in the egg, milk, and butter
gently stir in the apple

on a griddle set to 350
place about a tbsp of streusel topping
pour 1/4 cup of batter over the streusel topping

when tiny bubbles appear – it’s time to flip
{watch them – my edges got a little crispy}
cook for about another minute

serve with butter, syrup,  sauteed apples
or all of the above:)
