Today was our first day back to school.

It’s always exciting getting back to school especially for moms ๐Ÿ™‚ Our morning schedule is a bit different this year with two different start times, and I was worried that the extra early start was not going to go over well, but the kids were up and ready in a flash today without a single complaint. They were actually quite chipper for 6:30 am.

I’m no dummy though. I know this new school year excitement is temporary, and before long I’ll be back to dragging them kicking and screaming out of bed every morning.

So I armed myself with a list of quick grab and go breakfasts that I know the kids will love.

First up, apple streusel coffee cake muffins, because back-to-school always makes me think apples.

If it’s a sweet baked good Stella is all over it, but Charlie is not a huge muffin fan. Coffee cake is an entirely different story. He loves coffee cake. I’m pretty sure it’s the streusel on top. Or maybe it’s just ย that he gets to eat cake for breakfast. These apple streusel muffins are coffee cake, just in muffin form. ย They are loaded with apples, a hint of cinnamon, and LOTS of streusel topping.

For my non-muffin lover I may have called them individual coffee cakes.

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/2 cup plus 2 Tbsp milk
  • 4 Tbsp butter, melted
  • 2 apples, peeled and diced
  • for the streusel -
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1/2 tsp cinnamon
  • 2 Tbsp butter, melted


  • heat oven to 400 F.
  • combine flour, sugar, baking powder, salt, and cinnamon
  • whisk together the egg, milk, and melted butter
  • pour the wet ingredients over the dry, and stir just until combined
  • fold in the apples
  • pour into lined muffin cups
  • mix together the streusel ingredients and crumble over the top of each muffin
  • bake at 400 degrees 20 minutes
