I love baking bread, and I try to bake the majority of the bread  my family eats.  For sammies I  like a nice honey wheat, graham bread is great for snacking, and cinnamon swirl has got to be my kids favorite for toast in the morning.  Sometimes though, I just like a LWL {little white loaf}.

Plain and simple, a basic white loaf, fresh from the oven is my idea of bliss.

Sunday is bread baking day at my house, and yesterday along with the  bread,  I was making apple butter with  cider, and cider braised chicken. My kitchen smelled like a cider mill, and it got me to thinking…why not cider in bread.

You will not get an in your face cider taste, but there is a hint of apple and a faint sweetness. I’m sure you could play up the flavor by adding some cinnamon or sugar to the dough.  I just wanted to keep it simple.

Apple Cider {yeast} Bread


  • 2 tbsp butter {softened}
  • 1 tsp salt
  • 1 cup of warm cider {about 110}
  • 1 package of dry yeast
  • 2 1/2- 3 cups of AP flour


  • Sprinkle the yeast over the warm cider and let rest for about 5 minutes
  • stir in the salt,butter, and 2 cups of the flour
  • knead using the dough hook, gradually adding the remaining flour until you have a smooth ball
  • {the dough should not be sticky}
  • cover and let rise until the dough has doubled in volume {1 - 1 1/2 hours}
  • punch down the dough, and shape into a loaf
  • place the dough in a well buttered loaf pan, cover and let rise until doubled again
  • {the dough should be about an 1/2 inch over the rim of the loaf pan}
  • pre-heat the oven to 375
  • bake for about 30 minutes
  • remove the loaf from the pan, and cool on a rack


The cider replaces milk and sugar, while still producing a basic white loaf perfect for sandwiches, toast, or for snacking with a bit of butter and jam.
