what do you do when it still feels like summer but you’re dying for the flavor of fall? you make apple cider caramel sauce to pour over ice cream.

i’d love nothing more than to sit and enjoy a cup of hot mulled cider by a crackling fire. unfortunately our temperature and our calendar are not on the same page. our a/c has still been clicking on a few times each afternoon. our mornings and evenings are cool, but the days are still  hovering in the mid eighties.

so while i would love to be cooking stews and baking apple and pumpkin pies, the kids are still 100%  in ice cream mode, most likely due to the fact that the ice cream tuck still drives down the street every day.

it appears that our weather may be changing soon, but until then the kids can have their ice cream topped with this easy to make apple cider caramel sauce.

Ingredients:

  • 1 cup sugar
  • 1/2 cup heavy cream
  • 6 Tbsp butter cut into small pieces
  • 1/4 cup Boiled Cider
  • 1 tsp apple pie spice

Directions:

  • in a large heavy bottom sauce pot combine the sugar, cream, butter, boiled cider, and spice
  • bring to a boil over high heat, stir until the sugar dissolves
  • reduce the heat to medium and continue to cook until the caramel reaches 225 degrees
  • pour into heat safe jars
  • once completely cooled, cover and store in the refrigerator

boiled cider is the key to the delicious apple flavor in this caramel sauce. you can buy Boiled Cider , but it’s pricey, or you can make your own.   i opted to make my own boiled cider and my house has never smelled so good.  you simply boil your apple cider until it is reduced to 1/8 of its original amount (64 ounces down to 8 ounces). it is thick and has a molasses smell to it. boiled cider is delicious on it’s own poured over roasted vegetables or made into a vinaigrette, but we love it best in this  apple cider caramel sauce.

i also added apple pie spice to my caramel sauce, but that is completely optional. if you don’t have apple pie spice add 1/2 tsp cinnamon, 1/4 tsp nutmeg 1/8 tsp ginger and 1/8 allspice.

i really am hoping for some cool rainy weather soon, but until then i’ll be dipping everything in this apple cider caramel sauce.
