is it possible to have too many banana bread recipes? perhaps, but this almond joy banana bread recipe deserves a spot in your collection.

banana bread is one of those foods i could eat all day every day. it’s as good eaten for a late night snack as it is toasted with butter for breakfast.  there’s never not a good time to eat banana bread.

practically everyone has a go-to banana bread recipe. some are sweet, decadent, and loaded with chocolate. others are on the healthier side. they are all delicious if you ask me. much like brownies [4], i have never met a banana bread [5] i didn’t love.

this almond joy banana bread falls into the first category. and i’m not ashamed to admit the chocolate did not keep me from enjoying a slice with my morning coffee. the way i see it, it’s better than eating an actual almond joy and just as delicious.

  • 1 cup flour
  • 1/2 cup almond meal
  • 1/2 cup unsweetened shredded coconut [7]
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 ripe bananas, well mashed
  • 1/4 cup sour cream
  • 2 tsp vanilla
  • 1/2 cup (1 stick) of butter at room temperature
  • 1 cup brown sugar
  • 2 eggs at room temperature
  • 1/2 cup chopped dark chocolate


  • preheat oven to 350°
  • grease a standard sized 8.5-Inch-by-4.5-Inch loaf pan [8]
  • in a large bowl whisk together the flour, almond meal, coconut, baking soda, and salt
  • in another bowl combine the bananas, sour cream, and vanilla
  • in the bowl of a stand mixer, using the paddle attachment, cream the butter and sugar until light and fluffy (about 3 minutes)
  • add eggs one at a time, and then add banana mixture
  • add flour and mix until combined
  • scrape the sides and bottom of the bowl with a spatula, then fold in the chopped chocolate
  • pour batter into the prepared pan, and bake 55 - 60 minutes - the top will be dark, golden brown, and a pick inserted in the center should come out clean
  • cool in pan 15 minutes, then finish cooling on a rack
  • bread should be completely cool before slicing
  • store banana bread tightly wrapped in plastic at room temperature for up to 3 days

how to make a great banana bread

it goes without saying but banana bread is all about the bananas.  if you want a great loaf, the bananas need to be very ripe. as in practically black.

don’t skip the dairy. the first loaves of banana bread i made were from a recipe in The Fannie Farmer Cookbook [9]. it’s a good loaf, but not great. the addition of sour cream makes a good loaf great.

use brown sugar. it adds a more interesting flavor than granulated sugar.

for the “almond joy” part of the banana bread i added almond meal and unsweetened shredded coconut along with chopped dark chocolate. you could easily substitute chopped or slivered almonds for the almond meal. just make sure to increase the flour to 1 1/2 cups.

this may be my favorite banana bread ever, but then i say that with every loaf i bake.
