2 ingredient brownie bites
perfect for those days when you really don’t want to be in the kitchen, but chocolate is needed
Do you ever feel like you just need to check out for a while?
Usually after a weekend away I feel refreshed, the creative juices are flowing, and I cannot wait to get back to work. Our recent trip to Tahoe did NOT do this for me. In fact, to be honest I don’t feel like doing much of anything.
unless you count binge watching netflix, that I can handle
housework, blogwork, feeding my family…not so much
I’m going to blame my blahs on the weather. It feels way too much like summer, when all I want is to curl up on the couch with a bowl of soup and a big sweater.
Hopefully fall will bring my motivation back.
last night I fed my kids nachos for dinner
My total lack of interest in things kitchen related led me to these two ingredient brownies. Motivation or not two ingredients is something I can manage. One bowl means little clean-up; you don’t even need to break out the stand mixer if you don’t want to, but your arm will get a workout.
Baking them in a mini muffin pan means no cutting needed, and they are just the right size for lunch box packing.
Don’t let the avocado scare you, these are chewy, seriously fudgy, bite size brownies.
Ingredients
- 1 box brownie mix
- 1 large avocado, pitted, peeled, and well mashed
Instructions
- pre-heat the oven to 350
- spray a mini-muffin pan with non-stick cooking spray
- add the mashed avocado to the brownie mix, thoroughly blend - this will take a bit of effort if done by hand
- scoop 1 tbsp of batter into each muffin cup
- bake 15 - 20 minutes {check for doneness after 15}
- cool in pan for 5 minutes, remove from the tins and finish cooling on rack
