10 minute Strawberry Jam

My kids LOVE jam.

As in, they would use it on almost anything if I let them.

Toast, pancakes, waffles, yogurt, tortillas, spoon

Once a jar is opened, it pretty much disappears.

Ian’s family has a farm in Nebraska; it is by far Charlie’s favorite place in the entire world.  Every year Aunt Cat sends us jars of her homemade jam. It’s one of the best mail days of the year. Trouble is, those jars don’t last very long, and there have been actual fights about who gets the last few bites.  So I was thrilled when I opened up an old cookbook of mine to find  a recipe for 10 minute jam.

10 minute Strawberry Jam

Even though I have loved every single recipe in the book, I was a wee bit skeptical. Jam, in minutes, made in the microwave. It was pretty thin at first {it did mention this in the book} but as it cools, it thickens quite a bit. The big question, could it pass the kid test?

jar opened, spoon in, and…just like that it was gone. The kids loved it.
