honestly, i was in complete and total shock when i took the first bite of these muffins. they were far better than i anticipated.  i don’t mind whole wheat in baked goods. when the kids were little i never even kept  anything but whole wheat flour in the house. i think charlie was 10 before he had his first taste of white bread; of course, then the kids turned their noses to my whole wheat varieties.

but i’ll admit most baked goods made with 100% whole wheat flour can be dry and about as light as a lead balloon. that is not the case with these whole wheat zucchini chocolate chip muffins. the grated zucchini keeps them ultra moist, and the chocolate adds just the right amount of indulgence. plus with chocolate the kids don’t mind eating  zucchini.

with the kids back in school, muffins get baked on the regular. they are great for a quick breakfast when time is an issue, and stella loves taking them in her lunch. i prefer mine with a cup of tea once the house is quiet. it’s my reward for getting everyone up and out the door on time.

Ingredients:

  • 2 cups whole wheat flour
  • 1 Tbsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup milk
  • 4 Tbsp butter, melted
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup sugar
  • 1 cup grated zucchini
  • 1 cup of chocolate chips

Directions:

  • preheat the oven to 375 degrees
  • place liners in a standard 12-cup muffin tin
  • in a large bowl combine the flour, baking powder, cinnamon, and salt
  • in another bowl whisk together the milk, butter, egg, vanilla, and sugar
  • pour wet ingredients over the dry and stir to combine
  • fold in the zucchini and chocolate chips
  • spoon batter into liners (about 2/3 full)
  • bake 15 - 20 minutes until golden brown

while whole wheat flour is a healthier alternative to more processed flours, these are not exactly a health food. with butter and a fair amount of sugar, these muffins are still a bit of an indulgence. a worthwhile one at that.  they are on the sweet side, which of course the kids very much appreciate, but the amount of sugar could easily be reduced.

i’m not quite ready for pumpkin yet, so hopefully i can get a few more batches of zucchini muffins made for the freezer before our zucchini plant is done for the year.
