The only way we ever ate tuna as kids was in sandwich form. And if you have ever eaten a soggy tuna sandwich that sat in a hot locker for 4 hours, you’ll know why I stayed away from it for many years.

Then one day my mother in law served tuna on a bagel with tomato,salt, and a lot of pepper and I fell in love all over again. Now you will always find a few cans of tuna in my pantry. Tuna is terrific for fast and easy meals. I love it in an avocado especially for lunch. The best part,  a 2 ounce serving of wild selections tuna is only 1 point on weight watchers. So as you can imagine I have been eating tuna a lot lately.

Much to the kids dismay, Ian would love tuna noodle casserole at least once a week. But we, mainly me, are trying to cut back on the noodles. I love a good tuna melt, but then that really changes the whole 1 point on weight watchers benefit. So on a whim I tried a family favorite …baked sweet potatoes, and filled them with tuna topped with some greek yogurt, cilantro and a good dose of sriracha.

Ingredients:

  • 4 sweet potatoes (baked at 400 degrees for 40 - 50 minutes)
  • 2 cans wild selections solid white albacore in water
  • 1 small shallot, finely chopped
  • juice of 1 lime
  • salt and pepper to taste
  • 4 Tbsp Greek yogurt
  • cilantro, roughly chopped
  • sriracha

Directions:

  • in a bowl break up tuna with fork
  • add shallot and lime juice, mix with fork and taste for seasoning
  • when the potatoes are cool enough to handle, slice down the middle
  • divide the tuna among the four potatoes
  • top with 1 Tbsp yogurt, cilantro, and sriracha
  • serve warm
