pancakes cooked over an open fire are a camping staple for us, and this year I am upping my pancake game with these trail mix pancakes

we haven’t even left for ny yet, and i am already planning for our annual summer camping trip. no, we don’t tent camp. we stay in a bunk house that has a sink and a bathroom. but there’s no shower, no fridge, and we do cook all of our meals outdoors so to us it is camping. we love it and look forward to this trip all year long.

most of our meals we make pretty simple. lots of grilling burgers and hot dogs, chips, and fresh cut fruits and veggies that I can prep at home. the kids love to pack those little boxes of cereal, but on one of the mornings i love making pancakes over the fire.

i love pancakes, but there is just something special about food cooked outside. campfire pancakes are so much more delicious than the standard made in my kitchen pancakes, and this year I am upping my camping pancake game by adding trail mix [3].

i may never go back to plain pancakes again

  • for the dry mix -
  • 1 cup flour
  • 2 Tbsp sugar
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • to make the pancakes -
  • 1 cup buttermilk
  • 1 egg
  • 2 Tbsp melted butter
  • trail mix - 1 - 2 Tbsp per pancake


  • whisk together the flour, sugar, baking powder, baking soda, and salt - keep in a zip-lock bag until ready to make the pancakes
  • whisk together the buttermilk, egg, and melted butter
  • add the wet ingredients to the dry ingredients, and whisk only until incorporated
  • pour batter into a greased skillet set over the fire or griddle set to medium heat (use 1/4 cup per pancake)
  • sprinkle on 1 - 2 Tbsp chopped trail mix, cook pancake until bubbles appear on the surface and the bottom is golden brown, flip and cook until batter is cooked through
  • serve with butter, maple syrup, and trail mix for topping

for camping, i prepare the dry mix ahead of time and then mix in the buttermilk, eggs, and melted butter just before cooking. trail mix is a staple snack on camping trips, but i like to chop it a bit smaller before sprinkling it on the pancakes, but this is just my preference.

with the addition of nuts and seeds, these pancakes have added nutrition and keep you feeling full longer. with fruit and chocolate I find trail mix pancakes sweet enough on their own, no syrup needed. the kids disagree. either way these are now a camping trip must make breakfast for the kinnairds.
