sweet kale and crispy prosciutto panzanella
If I had my way, I would make every thing my family eats from scratch.
I try to make yogurt at least once a week, but it doesn’t always happen. I don’t make pasta nearly enough. I’m almost embarrassed by how much granola I buy. But bread, that I make, and I make it often. I bake at least two loaves a week. Hawaiian, seeded, even challah for special occasions. All this baking means I usually end up with a lot of leftover bits and ends.
If you took a peek into my fridge you would probably see three of four ziploc bags full of bread bits. I do not like to waste, so most of the time I use the ends for croutons. But at the rate I have been stocking bread ends, we’d have to eat salad three times a day for weeks to use it up.
That is exactly how this main dish salad came to be. My fridge is overflowing with Eat Smart Gourmet Vegetable Salad Kits and bread. And I do mean overflowing. When you open the door, there is a real good chance something is tumbling out.
I had never eaten or even heard of a panzanella salad until I moved to California. My mother in law made one for a summer bqq. Tomatoes, cucumber, and bread. I was instantly in love. What a great way to use up my leftover bread, but this isn’t exactly tomato season, and I would rather eat paper than a mealy tasteless off-season tomato.
so I tossed some toasted bread cubes, crispy prosciutto and an Eat Smart Sweet Kale Salad Kit together

serve this panzanella as a main dish for two, or as a delicious side for 4, either way it is a fast and easy way to get 7 superfoods into one amazing meal.
- 4 cups of day old bread cubes (I tossed my cubes with olive oil and toasted them)
- 2 ounces crispy proscuitto
- 1 Eat Smart Sweet Kale Salad Kit
- combine the bread cubes (toasted or not) with the salad kit veggies
- toss with the poppy seed dressing
- top with the cranberries, and seeds (from the kit) and the crispy prosciutto
