Yes, I said it. Sweet potatoes for breakfast. Not just any sweet potato though. These sweet potatoes are baked, then mashed with a little butter, some cinnamon, and brown sugar.

But that’s not all. Pile all the sweet potato goodness back into the skin and top with most delicious oat and almond streusel, Bake your sweet potatoes a bit longer and get ready to be wowed.

These twice baked sweet potatoes take breakfast to an entirely new level of deliciousness. Just look at that streusel…YUM.  I had originally planned to top my potato with bananas and some maple syrup, maybe even some peanut butter. Bananas and peanut butter are two of my breakfast go-to’s.  Only I took a quick bite to test them, and the potato disappeared. Nothing to add any bananas too. It was that good.

I do think that bananas and some maple syrup would be delicious.

Next time for sure.

Ingredients:

  • for each serving -
  • 1 sweet potato or yam
  • for the filling -
  • 1 Tbsp butter
  • 1 Tbsp brown sugar
  • 1/2 tsp cinnamon
  • for the streusel -
  • 2 Tbsp butter
  • 2 Tbsp old fashioned oats
  • 1 Tbsp chopped almonds
  • 1 Tbsp brown sugar
  • 1 Tbsp flour
       

Directions:

preheat the oven to 375 degrees
  • line a baking sheet with foil, pierce the sweet potato, and bake for 1 hour
  • as soon as the potato is cool enough to handle, scoop out the flesh
  • mash the potato with butter, brown sugar, and cinnamon
  • place the potato back into the skin
  • combine the oats, almonds, brown sugar, and flour
  • cut in the butter until you have small clumps
  • top the potato with streusel and bake for another 15  minutes

And if you’re still not convinced… sweet potatoes aren’t just delicious, they are good or you. They’re a great source of beta-carotene, Vitamin C, potassium, and loaded with fiber. Not a bad way to start your day right? When the weather turns cold, that morning smoothie isn’t going to cut it, and if you are addicted to streusel like I am, this is the breakfast for you.
