Strawberry Pastry Bites with Mascarpone and Balsamic

Happy Friday the 13th.

I don’t normally post on Friday or Saturday, but with tonight being a June full moon {also called the champagne moon}, plus Friday the 13th, and tomorrow in National Strawberry Shortcake day, well it seemed fitting to post these little strawberry pastry bites.

Strawberry Pastry Bites

Not quite strawberry shortcake, but equally as delicious.

They would make a great small bite before a meal,  and with a little honey would make a nice simple dessert.  I do plan on enjoying these  this evening while watching the moon and sipping champagne.

Our herbs are overflowing right now so I also added chopped mint; basil would be another great choice.

I’m pretty much addicted to aged balsamic, so of course a little drizzle

well I was trying to add just a drizzle

Charlie does not like whipped cream;  that’s why I didn’t go the traditional shortcake route.  I used mascarpone, but ricotta, or creme fraiche would be delicious as well.

As you can see, pretty much anything goes.

No puff pastry, use toasted bread for  a crostini

No strawberries, use raspberries, blackberries, even nectarines would be peachy

Part of the fun with cooking is getting creative with what you have at home already.

You never know what you’ll end up with.

Strawberry Pastry Bites with Mascarpone

Ingredients

  • 1 sheet of puff pastry
  • 1/4 cup mascarpone
  • strawberries - hulled and quartered {or other fruit} - the number will depend on the size and how many squares you cut from the pastry
  • fresh herbs such as mint or basil {chopped}
  • aged balsamic {optional}

Instructions

  • roll your pastry on a lightly floured surface {to about 1/4 inch}
  • cut into small squares
  • bake on a lined sheet for 10 minutes at 400 degrees
  • allow to cool
  • place a small amount of mascarpone on each pastry square
  • top with a berry and mint/basil/balsamic if using
